Chicken Fried Rice

We had lots of leftovers from a dinner a few nights ago, so I thought this would a be a good way to use them. It’s super simple (and probably not very authentic) but it was still yummy.

Chicken Fried Rice

  • 1/2 T olive oil
  • 2 cloves chopped garlic
  • 2 cups cooked rice mine was brown rice
  • 1 T soy sauce
  • 1 cup chopped cooked chicken breast mine happened to be teriyaki flavored
  • 1 egg beaten well
  • 1 cup peas if they’re frozen, thaw them first


  • Heat oil in saucepan, add garlic, rice, and soy sauce, and let rice heat up and get a little crispy. Add chicken and egg, stir well and let egg cook through. Add peas just before serving.
