Spicy Avocado and Salsa Breakfast Tacos
1 teaspoon oil
4 large eggs
1 teaspoon sriracha
salt and pepper to taste
4 corn tortillas
1/2 cup shredded cheddar cheese
1 avocado, diced
1/2 cup fresh salsa or pico de gallo
Heat the oil in a large skillet over medium heat. In a small bowl, whisk together the eggs, sriracha, and salt and pepper. Pour the eggs into the skillet and stir gently with a spatula until set. Warm the tortillas in the microwave for 30 seconds, or until softened. To assemble the tacos, divide the eggs between the tortillas, and top with cheese, avocado, and salsa. Enjoy!
