Simple Shortbread Cookies
These crisp and buttery simple shortbread cookies are incredibly delicious, and so easy to make!
Since we’re still majorly in the swing of cozy season around here, how about some delicious shortbread cookies to brighten up your day? They’re perfect for enjoying with a cup of hot chocolate or tea on a chilly day! They have the best crisp texture and a completely delicious buttery flavor. They are made with just five ingredients (all pantry staples), so it’s easy to whip up a batch any time you need a little treat. (Which, for me, is quite often.) They do require a little planning ahead, since you need to chill the dough in the freezer for about 30 minutes before baking, but they are well worth the wait!
You can add whatever flavoring you like to these shortbread cookies, although they are totally delicious as written with a little splash of vanilla. I also really like them with almond or lemon flavoring. The recipe makes 2-3 dozen cookies (depending on how thick you slice them), but they’re so addicting that they go fast! (Or at least that’s the case at my house…) They will keep for over a week if stored in an airtight container, so they are perfect for making ahead of time. If you’re making them for a crowd, you can easily double or triple the recipe, and if you need a smaller batch you can just slice off as many cookies as you need and save the rest of the log in the freezer until you are ready to bake. Easy peasy!

Simple Shortbread Cookies

Ingredients
- 1 cup butter softened
- 2/3 cup powdered sugar
- 1 teaspoon vanilla
- 2 cups flour
- 1/4 teaspoon salt
Instructions
- In a large bowl or the bowl of a stand mixer, beat together the butter and powdered sugar until light and fluffy. Add the vanilla and mix until combined. Add the flour and salt, and mix to form a thick dough. Shape the dough into a log that is approximately 2 inches in diameter. Wrap in parchment or plastic wrap, and freeze thirty minutes.
- Near the end of the chilling time, preheat the oven to 325 and line a baking sheet with parchment or silicone. Slice the cookie dough into 1/4 inch slices, and place 1/4 inch apart on the prepared baking sheet. Bake 18-20 minutes, or until light golden brown around the edges.
