This week Portland is finally getting the cool and rainy weather I’ve been waiting months for, and that means cozy season is in full swing at my house! I’ve totally been in the mood to bake lately, and have been filling my kitchen with all sorts of fall-themed deliciousness, like the apple cider doughnuts I shared earlier this week. And since nothing says fall like pumpkin, I’m excited to share some pumpkin treats with you over the next few weeks! This pumpkin granola is absolutely delicious, and so easy to make. It’s a must-make this fall!

I’ve tried to make granola several times in the past, without much success. It never seems to have the right texture or to clump together the way I want it to. This pumpkin granola, though, is absolutely perfect! It has such a great combination of flavors and textures, with cozy fall spices, sweet dried cranberries, crispy pumpkin seeds and pecans, and hearty old fashioned oats. It’s so easy to mix together, and bakes into a crisp and sweet treat that’s perfect for breakfast or snacking. It smells absolutely heavenly while it’s baking, and keeps well for several weeks if stored in an airtight container. It’s granola perfection!

Ingredients

  • 4 cups old fashioned oats
  • 1 cup pumpkin seeds
  • 1 cup dried cranberries
  • 3/4 cup pecan halves
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon cloves
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/2 cup real maple syrup
  • 1/2 cup canola oil
  • 1/2 cup brown sugar
  • 1/2 cup pumpkin puree
  • 1 teaspoon vanilla
  • 3 large egg whites

Instructions

  • Preheat the oven to 325 and line two baking sheets with parchment. In a large bowl, mix together the oats, pumpkin seeds, cranberries, pecans, cinnamon, cloves, nutmeg, ginger, and salt. In a small bowl or measuring cup, whisk together the maple syrup, oil, brown sugar, pumpkin puree, vanilla, and egg whites.
  • Pour the wet ingredients into the dry ingredients, and mix well to combine. Divide the granola mixture between the two prepared pans, and spread in an even layer.
  • Bake the granola for 40-45 minutes, stirring every 15 minutes. Let cool completely before storing in an airtight container.
