It’s officially soup season around here! (And by that I mean I eat soup year round without any regard to the temperature outside, but now that it’s getting cooler outside, it’s a little less weird to cozy up with a bowl of soup. 🙂 ) I have a whole repertoire of delicious soup recipes, and we eat all of them frequently. This Instant Pot chicken chili is always a favorite at my house, and my kids love it too. I had an evening recently when I hadn’t planned ahead very well, but still wanted some delicious chili. There was a rotisserie chicken in the fridge that I had already pulled the meat off, so I decided to use it and come up with a stovetop version of our favorite chili. This stovetop white chicken chili turned out completely delicious, and I love that it’s even quicker to make than the Instant Pot version!

Using rotisserie chicken is one of my favorite shortcuts to make dinner easier. Sometimes I buy the pre-pulled chicken from Costco, and sometimes I buy the whole chickens and process them myself. Either way, it’s quick and easy, and I love having already cooked chicken on hand to use for everything from chicken enchiladas to chicken pot pie. Combined with a few pantry and fridge staples, it makes a hearty and delicious chili. We love to top our chili with tortilla strips, shredded cheese, and sour cream, but it’s also delicious just as it is. This stovetop white chicken chili has the most delicious combination of flavors and textures, and is such a warm and comfy meal!

Ingredients

  • 4 tablespoons butter
  • 1/4 cup flour
  • 1/2 cup milk
  • 2 cups chicken broth
  • 1 1/2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 cups shredded or chopped rotisserie chicken
  • 1 small can green chilies
  • 1 can black beans drained and rinsed
  • 1 can great northern beans drained and rinsed
  • 2 cups frozen corn
  • 1/4 cup sour cream

Instructions

  • Melt the butter in a large pot over medium heat. Add the flour and whisk to form a paste. Cook 2-3 minutes, until golden brown. Add the milk and whisk to combine. Let cook 1-2 minutes, until thick and bubbling. Add the chicken broth, a little at a time, whisking to prevent lumps. Add the chili powder, cumin, garlic powder, salt, and pepper, and whisk to combine.
  • Bring the mixture to a simmer, then add the rotisserie chicken, green chilies, black beans, great northern beans, and corn. Simmer 10-15 minutes, until the chili has thickened and everything is warmed through. Remove from heat and stir in the sour cream. Serve hot.
