I mentioned before that I’ve been on a huge fall baking kick this year, and the trend continues with this glorious cinnamon bread! It has been several years since I visited a Great Harvest Bread Co. store, but my favorite bread from there has always been the cinnamon chip bread. It’s so soft and sweet, with a delicious cinnamon flavor that’s not overwhelming. When we lived in Utah, there was a Great Harvest just down the street from us, and we stopped by frequently for a warm slice of bread and a loaf of cinnamon chip bread to take home. It’s delicious as is, but it also makes the absolute best french toast. I’ve been trying to recreate that recipe at home for years now, and I’ve finally done it!

This cinnamon bread is so light and fluffy, and the cinnamon chips add the perfect amount of flavor! I used these cinnamon baking chips from Orson Gygi, and they are the absolute best. They give this bread such a nice flavor and texture, and are unlike any other cinnamon chips I’ve used. If you don’t want to order them, the Hershey’s cinnamon chips would work in a pinch, but they are quite a bit bigger and have a slightly different flavor, so your bread may turn out a little different than mine. Either way, I’m sure it will be delicious!

This bread will keep well at room temperature for 2-3 days, or in the fridge for up to a week. You can also freeze it for up to six months. I like to slice it before I freeze it so it’s easy to pull out a slice or two when I need an easy snack. It’s great just as is, or with a little butter on top, but it also makes absolutely heavenly French toast. My whole family loves this bread, and can’t get enough of it. It disappears immediately every time I make it. You definitely need to give it a try!

Ingredients

  • 1 1/3 cups warm water
  • 1 1/2 tablespoons yeast
  • 1/4 cup sugar
  • 2 eggs
  • 2 teaspoons salt
  • 2 tablespoons canola oil
  • 5 1/2 – 6 1/2 cups flour
  • 1 1/2 cups cinnamon baking chips

Instructions

  • In a large bowl or the bowl of a stand mixer, mix together the water, yeast, and sugar. Let sit 5-10 minutes, until the yeast is foamy. Add the eggs, salt, and oil, and mix well. Add the flour, 1 cup at a time, until the dough starts to pull together. Mix in the baking chips. Add flour as needed to form a soft dough that pulls away from the sides of the bowl. Place the dough in a greased bowl and let rise for one hour, or until doubled in size.
  • Spray two bread pans with cooking spray. When the dough has risen, punch it down and divide into two equal sized pieces. Roll each piece out into a rectangle on a lightly floured surface. Starting from the short end, roll each rectangle up into a cylinder, and place seam-side down into the prepared bread pans. Cover and let rise in a warm place for one hour.
  • During the last fifteen minutes of rise time, preheat the oven to 375. Bake the loaves for 25-30 minutes, until they are golden brown on top and sound hollow when tapped. Brush the loaves with butter immediately after removing from the oven. Let cool for 5-10 minutes in the pans, then remove to a cooling rack. Allow to cool completely before slicing and serving.
