Who else lives with a picky eater (or two)? My twelve year old can be a little particular about food, but she likes enough foods that it’s relatively easy to find meals that we all like. We had a few years where it was quite a challenge, but lately she has started being willing to try more foods, and I’m pretty good at making our meals adaptable so she can find something she likes. I was patting myself on the back for having figured out how to deal with picky eating (ha ha!) and then my two year old came along.

It is a daily struggle to find foods that she will eat (especially because she often drops foods that she previously enjoyed) and especially hard to get her to eat protein. She doesn’t like any kind of meat, and won’t touch beans, tofu, or most vegetables. She gets most of her protein from milk and yogurt, but I keep trying to tempt her to try a bite of chicken or fish. Since she’s a big fan of Ritz crackers, I thought she might be willing to taste some crispy chicken strips coated in her favorite crackers. (Spoiler alert: She absolutely refused to even try them. 🙂 ) Despite the toddler rejecting them, the rest of us loved them, so I’m sharing the recipe here!

These Ritz chicken strips are crispy on the outside, but flavorful and tender on the inside. They’re super quick and simple to make, but my older kids love them just as much as fast food chicken strips. The Ritz crackers make a delicious and flavorful coating for the chicken, and I love that I nearly always have the ingredients on hand to make them. They’re delicious dipped in barbecue sauce or honey mustard, and I’ve been known to chop up the leftovers and use them in a salad or wrap for lunch the next day. They’re so tasty and so easy to make!

Ingredients

  • 1 1/2 pounds chicken breasts cut into strips
  • 1 sleeve Ritz crackers crushed
  • 1/4 cup bread crumbs
  • 1 tablespoon parmesan cheese
  • 1 teaspoon garlic salt
  • 1 tablespoon olive oil

Instructions

  • Preheat the oven to 375. Place a cooling rack on top of a baking sheet, and spray with cooking spray. In a shallow dish, whisk together the crushed Ritz crackers, bread crumbs, parmesan cheese, and garlic salt. Toss the chicken breast strips with the olive oil, then dip each strip into the cracker mixture, coating all sides.
  • Place the chicken strips on the prepared cooling rack, and spray with cooking spray. Bake 20-25 minutes, or until golden brown and cooked through.
