Who else is totally obsessed with Great British Bake Off? It’s the TV equivalent of comfort food for me, and I have probably seen every episode at least 5 times (or more). I turn it on in the background while I’m working, and it’s my go-to when I’m up at night with a new baby or need something comforting to watch before bedtime. I love that the contestants are so kind to each other and help each other out, and I love seeing everything they create. I’m always inspired to try new recipes after watching! I wasn’t familiar with millionaire shortbread before I started watching, but after watching an episode where the contestants made it for the signature challenge, I couldn’t wait to try it at home!

If you’re not familiar with this shortbread, it’s basically like a homemade Twix bar! It doesn’t get much better than that, right? It starts with a layer of buttery shortbread, is topped with a delicious homemade caramel, and finished with a layer of chocolate. For an extra delicious touch, I love sprinkling flaky sea salt over the top. These bars are so incredibly delicious and rich!

The homemade caramel layer is silky smooth and decadent, and so easy to make! I used a candy thermometer to make sure my caramel was at the correct temperature. It’s definitely worth it to get the caramel to the right texture. Once the caramel is finished, you’ll pour it over the baked shortbread crust.

You can melt the chocolate chips in the microwave beforehand, and then pour the melted chocolate over the caramel, but I opted for the easier option instead. I just sprinkled the chocolate chips over the hot caramel, waited for them to melt, and spread the chocolate out in an even layer.

Seriously, how beautiful are these millionaire bars? The only frustrating part is waiting for them to cool down completely before slicing and serving. If you can wait until they are completely cool, they will slice neatly instead of the caramel running out everywhere and being a mess. Trust me, these bars are worth the wait!

Millionaire’s Shortbread

Ingredients

for the shortbread:

  • 1 cup butter softened
  • 1/2 cup sugar
  • 2 cups flour
  • 1/2 teaspoon salt

for the caramel:

  • 1 14 ounce can sweetened condensed milk
  • 1 cup brown sugar
  • 1/2 cup heavy whipping cream
  • 1/2 cup light corn syrup
  • 1/2 cup butter
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla

for the chocolate layer:

  • 8 ounces semisweet chocolate chips
  • flaky sea salt I like Maldon salt

Instructions

  • Preheat the oven to 350. Line a 9 x 13 baking dish with parchment paper. In a medium bowl, beat together the butter, sugar, flour, and salt until combined. Press the shortbread dough into the prepared pan and bake 20 minutes.
  • To make the caramel, mix the sweetened condensed milk, brown sugar, whipping cream, corn syrup, butter, and salt in a heavy saucepan. Cook over medium heat, stirring frequently, for about 20-25 minutes, until golden brown and 235-240 degrees. Remove from heat and stir in the vanilla.
  • Pour the caramel over the shortbread crust and spread evenly. Let sit 5-10 minutes, then sprinkle the chocolate chips over the top of the caramel in an even layer. Let sit for another 5-10 minutes, then spread the melted chocolate chips evenly over the caramel. Sprinkle with flaky sea salt. Let cool completely before slicing and serving.
