Is anyone else a huge Starbucks lemon loaf fan like I am? When I was growing up, we ate out pretty rarely. We didn’t have a lot of money, and eating out was reserved for birthdays and special occasions. And almost without fail, every time we would go out to eat, my mom would say something along the lines of, “I could make this at home!” In most cases, it was actually true, since she’s always been a great cook and is really good at figuring out how to make recipes from scratch.

Now that I’m a mom, it’s always funny to hear my mom’s words coming out of my own mouth, and one of the most frequent phrases I hear is, “I could make this at home!” Just like my mom, I think it’s fun to figure out how to make all of our favorite restaurant foods from scratch. With that in mind, I’ve made everything from aebleskiver to broccoli cheddar soup to mile high biscuits, and so far I think I’ve done a pretty good job. Since I’m a big fan of all things lemon, I decided it was time to try to make my own version of my favorite Starbucks lemon loaf. I found a delicious looking recipe on Design Eat Repeat, made a few small tweaks, and whipped up a batch. This recipe is one of my new favorites! It’s so sweet and delicious, and super easy to make. It’s the perfect way to enjoy my favorite coffee shop treat at home!

This lemon loaf gets its flavor from a combination of fresh lemon zest and lemon extract, with a sweet and tart lemon glaze that amps up the flavor even more. The loaf itself is so tender and buttery and rich, with a texture similar to pound cake. It’s made using pantry and fridge staples, so it’s easy to whip up a loaf whenever the craving strikes!

for the loaf:

  • 1 cup sugar
  • zest of one lemon
  • 1/2 cup butter softened
  • 2 teaspoons lemon extract
  • 2 teaspoons vanilla
  • 2 large eggs
  • 1 1/4 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 tablespoon cornstarch
  • 1/4 cup milk
  • 1/4 cup canola oil

for the glaze:

  • 1 tablespoon butter melted
  • 1 cup powdered sugar
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon milk
  • pinch of salt


  • Preheat the oven to 350. Line a loaf pan with parchment paper and spray with cooking spray.
  • In a large bowl or the bowl of a stand mixer, rub the lemon zest into the sugar with your fingers until fragrant. Add the butter, lemon extract, and vanilla, and mix until light and fluffy. Add the eggs, one at a time, mixing well after each addition.
  • In a small bowl, whisk together the flour, salt, baking powder, and cornstarch. Mix in half of the flour mixture, followed by the milk and oil, and then the remaining flour mixture. Mix until just combined.
  • Pour the batter into the prepared loaf pan. Bake for 50-60 minutes, until a toothpick inserted in the center comes out clean. Remove from the oven and let cool completely.
