It’s weird how a few years ago, people were making EVERYTHING with cauliflower (cauliflower mac and cheese, cauliflower buffalo wings, cauliflower rice, etc.) and now it almost feels like there is a backlash against cauliflower. I do really like cauliflower, but I also don’t think it’s a good substitute for certain things (like rice, or buffalo wings). Instead of trying to make cauliflower into something it’s not, let’s just enjoy it for what it is! It’s delicious dipped in ranch dressing, roasted in the oven, or (best of all) made into this cheesy cauliflower soup.

I’ve been making this soup for over a decade now, and it is always a family favorite. It’s so creamy and smooth, and tastes amazing! This soup has a very mild flavor, similar to potato soup, but you can jazz it up with hot sauce or add toppings to your heart’s content. I usually serve it with tortilla chips and shredded cheese on top, and my family loves it that way. It would also be delicious with bacon, sour cream, and chives!

This soup freezes well, and each batch makes about eight servings, so I usually put half of it in the freezer for another day. It’s rich and creamy, and works great as a main dish with fresh bread, or a side dish with sandwiches. We can’t get enough of this soup!

Cheesy Cauliflower Soup

Ingredients

  • 3 tablespoons butter
  • 1 medium onion diced
  • 1/4 cup flour
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup half and half
  • 1 cup milk
  • 4 cups chicken broth
  • 2 1/2 pounds cauliflower cut into florets
  • 1 teaspoon dijon mustard
  • 1 1/2 cups sharp cheddar cheese shredded

Instructions

  • Melt the butter in a large pot over medium heat. Add the onion and saute until translucent. Whisk in the flour, salt, and pepper to form a paste, and cook two to three minutes. Slowly add the half and half, whisking constantly to avoid lumps. Slowly add the milk and chicken broth while continuing to whisk.
  • Add the cauliflower and bring to a simmer. Cover and simmer 15 minutes, or until the cauliflower is tender. Remove from heat and puree using an immersion blender, or blend in batches with a regular blender (removing the center part of the blender to allow steam to escape). After the soup is pureed, stir in the dijon mustard and cheddar cheese. Adjust seasonings to taste and serve.
