It’s officially spring! We had a really nice stretch of warm sunny days last week, and spent every minute we could outside soaking up the warm weather. The littles played in the backyard, my husband made dinner on the grill, and everyone got some sun. It was lovely! And now the forecast ahead of us is day after day of gloomy and rainy weather. (Whomp whomp.) It’s par for the course in the Pacific Northwest, but it was lovely to have a little taste of spring! As much as I miss the sun, I’m a little glad that we don’t have to say goodbye to the hearty and warm winter meals quite yet, though. This Instant Pot beef stew is one of my favorites, and I love that it’s so easy to make!

This beef stew is really similar to my simple beef stew recipe, but using the Instant Pot makes it even faster and easier to make. I made this stew for St. Patrick’s Day, after spending the afternoon hosting a birthday party for my newly minted thirteen year old and her friends, and it was the perfect dinner for an exhausting day! This stew is so thick and savory, and tastes like it has been cooking all day after just thirty minutes in the Instant Pot. We love to serve it with a dollop of cold sour cream on top, and it’s absolutely delicious!

Instant Pot Beef Stew

Ingredients

  • 1 1/2 pounds stew beef cut into bite sized pieces
  • 1 teaspoon garlic salt
  • 1/2 teaspoon pepper
  • 2 tablespoons flour
  • 2 tablespoons olive oil
  • 1 medium onion chopped
  • 2 cups beef broth
  • 1 package onion soup mix
  • 2 tablespoons tomato paste
  • 2 teaspoons Worcestershire sauce
  • 3 medium carrots cut into bite sized pieces
  • 3 cups golden potatoes cut into bite sized pieces
  • 1 cup frozen peas

Instructions

  • Sprinkle the beef with the garlic salt and pepper, and toss it with the flour to coat.
  • Heat the olive oil in the Instant Pot insert on sauté mode. Add the onion to the pot and cook until softened. Add the beef to the pot and cook until browned, stirring frequently.
  • Add the beef broth to the Instant Pot and use a spatula to scrape up the browned bits from the bottom of the pot. Add the onion soup mix, tomato paste, and Worcestershire, and stir to combine. Add the carrots and potatoes to the pot, and stir to combine.
  • Place the lid on the pot and turn the knob to seal. Cook for 30 minutes at high pressure, then let the pressure naturally release for 20 minutes. Quick release the remaining pressure, remove the lid, and stir in the frozen peas.
  • Serve hot with a dollop of sour cream on top.
