Why, yes, it is another soup recipe! I just can’t get enough, I guess. 🙂 This cheesy broccoli potato soup recipe actually came about by accident a few months ago. I was already in the middle of making my favorite broccoli cheddar soup and realized I didn’t have enough broccoli to finish the recipe. My oldest was home sick from school and had requested something warm and comforting for dinner, and I didn’t want to disappoint her. So I pressed on ahead and made a few tweaks to the recipe, including adding some potatoes to bulk it up. It ended up being a new favorite, and my kids like it even better than the original version!

This soup is so cheesy and warm and cozy! It’s the essence of comfort food. I also love that it’s super easy to make, and I (usually) have all of the ingredients on hand. It’s quick enough for a weeknight dinner, and generally pretty picky-eater friendly. Even my kid who doesn’t enjoy vegetables loves this soup! I think it helps to chop the broccoli and potatoes into smaller pieces to make it a little easier to eat. Shredding the carrots and cooking them with the onions gives them a better texture, and makes the soup a nicer color too.

This soup has quickly become a staple in our house, and it’s on the menu frequently. It’s perfect paired with some hot slices of homemade bread, flaky biscuits, or breadsticks!

Cheesy Broccoli Potato Soup

Ingredients

  • 4 tablespoons butter
  • 2 medium carrots peeled and shredded
  • 1/2 medium onion finely chopped
  • 2 cloves garlic minced
  • 1/2 cup half and half
  • 1 1/2 cups milk
  • 3 cups chicken stock
  • 1/4 cup corn starch
  • 1/4 cup water
  • 3 medium Yukon gold potatoes peeled and diced
  • 4 cups broccoli florets
  • 2 cups shredded sharp cheddar cheese
  • 1-2 teaspoons salt to taste
  • pepper to taste

Instructions

  • In a large pot over medium heat, melt the butter. Add the carrots, onion, and garlic, and sauté until softened and fragrant. Add the half and half, milk, and chicken stock, and stir to combine. Add the corn starch and water to a small bowl, and whisk with a fork until the corn starch is dissolved and the mixture is smooth. Pour the corn starch mixture into the pot and bring it to a simmer.
  • Add the potatoes and simmer until tender, about 10-15 minutes. Stir in the broccoli and cook for an additional 5-10 minutes, until bright green and tender. Remove the soup from the heat and stir in cheese. Add 1 teaspoon salt, taste, and add more as needed.
