Who else has seen these chocolate chip cookie croissants going around on TikTok? I will admit I was pretty skeptical when I saw them for the first time. (Somehow they reminded me of that meme of the toast sandwich? Like, you can’t stuff bread with bread. 🙂 ) But then my wonderful friend (and fellow foodie) Cortney texted me and told me that I NEEDED to try them ASAP. I am not one to argue with her when food is on the line! I picked up some croissants from Costco, whipped up some of my favorite chocolate chip cookie dough, and had these babies ready to eat in less than 30 minutes. And oh, my goodness! They are absolutely fabulous. They’re so rich and decadent, like a gooey chocolate croissant but made even better with the added bonus of cookie dough!

The croissant gets crispy and flaky in the oven, while the cookie dough stays gooey and melty. The combination of flavors and textures is absolutely delicious. I’ve made these four times since I first tried them a few weeks ago, and they are now one of my favorite desserts! So far, I’ve always made them with my homemade cookie dough, but I’m sure store-bought cookie dough would work in a pinch. I like the Costco croissants because they’re big (and inexpensive) but you can use whatever croissants you like.

The extra cookie dough on top of the croissant is a bit superfluous, but it is a pretty good indicator of when the croissants are done. You’ll want to pull them out when the cookie dough on top is light golden. The dough inside will still be a little underdone and gooey, which makes them totally irresistible!

Once they’re baked, you’ll let them cool for a few minutes, then sprinkle a little powdered sugar on top. Just like the extra bits of cookie dough, it’s not strictly necessary, but it makes them even prettier!

I think these chocolate chip cookie croissants are best when they’re hot from the oven, but they’re still very tasty cold. I would highly recommend warming up the leftovers in the air fryer for a few minutes to make them gooey and melty again.

The cookie dough recipe makes enough for 12-15 croissants, so you can either refrigerate the leftovers and make croissants again within the next few days, or you can just bake the extra as cookies. (It also freezes really well, and you can find directions for freezing here!)

Ingredients

for the cookie dough:

  • 12 tablespoons butter melted
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 1 egg + 1 egg yolk
  • 2 teaspoons vanilla extract
  • 2 1/4 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups semi-sweet chocolate chips

for assembling:

  • 4 large croissants
  • powdered sugar

Instructions

  • Preheat the oven to 350. Line a baking sheet with parchment or silicone. In a large bowl or the bowl of a stand mixer, mix together the butter, brown sugar, and sugar. Add the egg, egg yolk, and vanilla extract, and mix until combined. Add the flour, baking soda, and salt, and mix to form a soft dough. Gently fold in the chocolate chips.
  • Slice each croissant in half horizontally and spread 3-4 tablespoons of cookie dough in an even layer on one half of the croissant. Place the other half of the croissant on top. Press a teaspoon-sized ball of cookie dough on top of each side of the croissant.
  • Bake in the preheated oven for 12-13 minutes, until the cookie dough on top is light golden brown. Remove from oven and let cool for 5 minutes, then sprinkle with powdered sugar and serve warm.
