I’m so excited that it’s finally spring, but we’re still on the weather roller coaster here in Portland. We’ll have several warm and lovely days and soak up as much sunshine as possible, followed by a week or two of gloomy, rainy weather. Every time it gets cold again my spirits drop a little. I’m so ready for more sun! The bright side of those colder days is that I can still make all of my favorite cold-weather foods for dinner, like this delicious sausage tortellini soup.

This soup is so easy to make, and has so many delicious flavors working together to make a fantastic dish. I usually make it using fresh cheese tortellini from Costco, but it works just as well with frozen tortellini. The combination of savory broth, flavorful sausage, and plump tortellini is so hearty and delicious! I usually serve it with breadsticks or French bread on the side, and together they make a delicious and wholesome meal.

Like most soups containing pasta, this soup is best the day it’s made, but I think the leftovers are pretty tasty too. The tortellini gets a little softer and absorbs some of the broth, but it’s still delicious! This soup is a family favorite!

Ingredients

  • 2 teaspoons olive oil
  • 1 onion diced
  • 2 teaspoons minced garlic
  • 1 pound ground Italian sausage
  • 4 cups chicken broth
  • 24 ounces diced tomatoes
  • 8 ounces tomato sauce
  • 1 teaspoon salt more or less to taste
  • 1/4 teaspoon pepper
  • 4 ounces cream cheese softened
  • 1 16 ounce package frozen tortellini
  • 3 cups chopped fresh spinach
  • 3/4 cup half and half
  • 1/4 cup parmesan cheese

Instructions

  • Heat a large pot or dutch oven over medium heat. Add the onion and garlic to the pot and cook until softened and fragrant, about 2-3 minutes. Add the Italian sausage and break it into smaller pieces as it cooks.
  • When the sausage is nearly cooked through, add the chicken broth, diced tomatoes, tomato sauce, salt, and pepper, and bring to a simmer. Stir in the cream cheese and cook 5-10 minutes, stirring gently, until the cream cheese has melted.
  • Add the tortellini to the pot and cook 4-5 minutes, or until the tortellini is plumped up and floating. Remove from heat and stir in the spinach, half and half, and parmesan. Serve immediately.
