We had lots of leftovers from a dinner a few nights ago, so I thought this would a be a good way to use them. It’s super simple (and probably not very authentic) but it was still yummy.
Chicken Fried Rice
1/2 T olive oil
2 cloves chopped garlic
2 cups cooked rice (mine was brown rice)
1 T soy sauce
1 cup chopped cooked chicken breast (mine happened to be teriyaki flavored)
1 egg, beaten well
1 cup peas (if they’re frozen, thaw them first)
Heat oil in saucepan, add garlic, rice, and soy sauce, and let rice heat up and get a little crispy. Add chicken and egg, stir well and let egg cook through. Add peas just before serving.
