saucy apricot chicken

This is one of those awesome quick and easy dinner recipes that is just perfect for a busy night! I don’t know about you, but between work and kids and life, it feels like every night is a busy night. It’s pretty rare now that I make anything very complicated for dinner, but this recipe is beyond simple: you basically just mix a few ingredients together, pour the sauce over the chicken, and bake. Easy peasy! I whipped up some quick coconut rice to go with it, and they were great together! Beyond the chicken’s simplicity, though, it’s also really tasty, and the sauce makes the chicken perfectly juicy. I love the sweetness and tanginess of the sauce in contrast with the savory chicken and the creamy rice. Yum!
Saucy Apricot Chicken
adapted from Cook and Craft Me Crazy3 boneless skinless chicken breasts, cut into strips
1/2 cup apricot preserves
1/2 cup Russian dressing
1 teaspoon chicken base, or one chicken bouillion cube
1/2 teaspoon garlic powder
salt and pepperLightly spray an 8 x8 baking dish with cooking spray. Arrange chicken in a single layer in the dish, and season with salt and pepper. In a small bowl, whisk together apricot preserves, Russian dressing, chicken base, and garlic powder. Pour sauce mixture over chicken. Bake at 350 for 40-45 minutes.
My mom used to make this all the time for my sisters and I. It was one of her signature chicken dishes, so delicious and easy!
