Sprinkle Sugar Cookies
These fun and colorful sprinkle sugar cookies are so delicious, and so easy to make! They’re the perfect way to brighten your day!

Who else is absolutely mired in the winter blahs right now? (Or is it just me?) February is usually one of my favorite months because I love Valentine’s Day, and my birthday is February 19th, but this month has been a total slog. It just feels like one dreary day after another, with no sunshine in sight. In fact, as I write this there is heavy snow falling outside and I’m wrapped in a blanket huddled next to the fireplace. Which, you know, is cozy and nice, but also I JUST WANT TO GO OUTSIDE WITHOUT NEEDING FIVE JACKETS. So anyway, since I can’t actually make sunshine and warm weather appear at will, how about some bright and colorful cookies instead? These sprinkle sugar cookies are so easy to make, and can brighten up any dull winter day.

There are lots of different styles of sugar cookies (and I love pretty much all of them!) but I would say these cookies fall into the chewy and crisp around the edges category, similar to sugar cookies from the grocery store bakery. They’re not the type of sugar cookies that you roll out and spread with frosting, but they’re so flavorful (and cute!) on their own that you won’t even miss the frosting. These cookies would be delightful for celebrating a birthday, or just making any day a little more special! I found my colorful sprinkle mix at Orson Gygi, but you can use any combination of colors you like. I definitely prefer to use jimmies (instead of nonpareils or quins) for these cookies because I find that the colors bleed less into the dough, and the end result is prettier.

Sprinkle Sugar Cookies

Ingredients
- 1/2 cup butter softened
- 3/4 cup sugar
- 1 large egg
- 1 teaspoon vanilla
- 1 1/2 cups flour
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cream of tartar
- 1/2 cup rainbow sprinkles
Instructions
- Preheat oven to 350. Line a baking sheet with parchment or a silicone baking mat. In a large bowl or the bowl of a stand mixer, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla until well blended. Add the flour, salt, baking powder, baking soda, and cream of tartar, and mix until a dough forms. Fold in sprinkles until well distributed.
- Chill the dough for at least 30 minutes. Scoop the dough into 1 inch balls and place on the prepared baking sheets, sprinkling with additional sprinkles if desired. Bake 10 minutes, then remove and let cool for 5-10 minutes on the baking sheet before removing to a cooling rack. The cookies will look very soft and undercooked when you pull them out, but they will cook more as they cool on the pan. Enjoy!
