Summer is definitely starting to wind down, but I am not ready to let go of it yet! Here in Portland, it often stays pretty warm and summery until October-ish, so it still feels like summer outside. I’m just going to keep enjoying all of my favorite summer foods for as long as I can. This quick and easy lemonade is so delicious and refreshing, and tastes fantastic any time! It has the perfect balance of tart and sweet flavors, and tastes amazing!

The method for making this lemonade is a little unusual, but it is so much easier than squeezing the lemons by hand! You’ll want to be really careful not to over-pulse the lemons in the blender (you can also use a food processor) or the rinds will make the lemonade bitter. Just 8-10 pulses will break the lemons down enough to give the lemonade lots of flavor without being bitter. After that, you’ll just pour the lemon mixture through a fine mesh strainer, add ice, and you’re done! It seriously could not be easier, and it makes the absolute tastiest lemonade. This recipe is always a favorite at my house!

Ingredients

  • 2 large lemons washed
  • 4 cups cold water plus enough ice to make 6 cups total
  • 1 cup sugar

Instructions

  • Cut the ends off the lemons, then cut each lemon into eighths. Stir together the water and sugar, and mix until the sugar is dissolved. Add the lemons and the sugar water to a blender and pulse 8-10 times, until the lemons are broken up slightly. Pour the mixture through a strainer into a large pitcher and add the ice.
