It has been way too long since I shared a new cookie recipe here! I make chocolate chip cookies at least once a week for my family (sometimes more often, if the craving strikes!) and they are everyone’s favorite. Since I sometimes get a little bored with the basic recipe, it’s fun to change things up every now and then and try new flavor combinations. These toffee chocolate chip cookies are just as delicious as my regular chocolate chip cookie recipe, and the combination of toffee and chocolate is totally irresistible!

I used Heath toffee bits to give these cookies their delicious toffee flavor, but feel free to use any toffee that you like. (I would recommend chopping it finely if you’re not using the pre-packaged Heath bits.) For the chocolate, I used Guittard semi-sweet chips. I love that they’re extra silky and luscious when they’re melted! Using good quality chocolate makes these cookies even more decadent and delicious. Feel free to use whatever chocolate you like, though!

To make the finished cookies even prettier, you can sprinkle them with some extra toffee bits, although it’s not strictly necessary. You can’t go wrong with more toffee, though, right? These cookies have such a delicious toffee flavor, and the combination of flavors and textures is so good! Ingredients

  • 12 tablespoons butter melted
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 1 egg + 1 egg yolk
  • 2 teaspoons vanilla extract
  • 2 1/4 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup Heath toffee bits

Instructions

  • Preheat the oven to 350. Line a baking sheet with parchment or silicone. In a large bowl or the bowl of a stand mixer, mix together the butter, brown sugar, and sugar. Add the egg, egg yolk, and vanilla extract, and mix until combined. Add the flour, baking soda, and salt, and mix to form a soft dough. Gently fold in the chocolate chips and toffee bits.
  • Scoop the dough onto the prepared baking sheet using a large cookie scoop (I like to use a 3 tablespoon scoop). Bake 12-13 minutes, or until the cookies are lightly browned around the edges but still just slightly underbaked. Let cool on the pan for 5 minutes before moving to a cooling rack.
