Every time the seasons change, I get excited about re-stocking the freezer with easy meals. Now that the cooler weather is on its way, I’ve been craving comfort food meals like enchiladas, pot pie, and lasagna. There’s something so comforting and delicious about a casserole, especially when it’s cheesy! This white chicken lasagna is a favorite at our house, and it’s perfect for the freezer. It reheats beautifully, and is the perfect way to enjoy a delicious comfort food meal with very little effort.

This lasagna has a homemade béchamel as its base, and the creamy sauce adds so much flavor to the finished dish. It’s simple and quick to make, and the flavors of garlic and parmesan are totally delicious. The lasagna has layers of tender noodles (I love using the Barilla oven-ready noodles to make things quick and easy) and a creamy ricotta, chicken, and spinach filling, all layered in between gooey provolone cheese. I use rotisserie chicken to make it easy to assemble, and it all comes together quickly.

The recipe below is for one 9 x 13 pan of lasagna, but I often double the recipe and make it into four 9 x 9 pans of lasagna. The 9 x 9 pans are a better size for my family, and they are easy to put in the freezer for another day. I assemble the lasagnas in disposable foil pans, cover them in plastic wrap and foil, place them in gallon freezer bags. When I’m ready to bake, I pull off all of the wrappings, replace the foil, and bake the lasagna for about 90 minutes covered, then uncover the lasagna for the last 15 minutes to let the cheese get browned and bubbly. It’s a super easy way to stock the freezer with comfort food. This white chicken lasagna is a favorite around here!

Ingredients

for the sauce:

  • 4 tablespoons butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 cup chicken broth
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1/2 cup parmesan cheese

for assembling:

  • 32 ounces ricotta cheese
  • 1/4 cup grated parmesan cheese
  • 2 eggs
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 8 ounces frozen spinach thawed and drained
  • 3 cups shredded cooked chicken
  • 18 slices provolone cheese
  • 1 package oven ready lasagna noodles

Instructions

  • Preheat the oven to 350.
  • To make the sauce, melt the butter in a large skillet over medium heat. Add the flour and stir to make a paste. Cook 2-3 minutes, until golden and bubbling. Slowly add the milk and the chicken broth, whisking constantly to prevent lumps. Add the salt, pepper, and garlic powder, and bring the sauce to a low simmer. Simmer until thickened, then remove from heat and stir in the parmesan cheese.
  • To make the filling, add the ricotta, parmesan, eggs, salt, pepper, garlic powder, spinach, and chicken to a large bowl and stir to combine.
  • To assemble the lasagna, spread 1/2 cup of the sauce in the bottom of a 9 x 13 pan. Layer 3 of the lasagna noodles in the bottom of the pan. Spread half of the ricotta mixture over the top of the noodles. Spread six slices of provolone in an even layer over the top of the ricotta. Spoon one cup of the sauce over the top of the cheese. Add another layer of 3 lasagna noodles, followed by the remaining ricotta mixture, and six slices of provolone. Top the provolone with another layer of 3 lasagna noodles, followed by a cup of sauce and the remaining six slices of cheese.
  • Cover with foil and bake 50 minutes, then remove the foil and bake for an additional 15 minutes, or until the sauce is bubbling and the cheese is lightly browned on top.
