If you, like me, are constantly riding the banana roller coaster, this banana bread snack cake is for you! Bananas are one of the few foods my toddler consistently loves, so I try to always have them on hand, but sometimes we eat an entire bunch in one day, and other times we seem to have spotty bananas coming out of our ears. In general, I’m not very picky about food, but I absolutely will not eat a banana once it gets spotty. At that point, they just taste sickly sweet to me and I have zero interest in them! Since I’m always trying to reduce our food waste, I like to bake treats with the spotty bananas, and then it’s a win for everyone!

This banana bread snack cake is really similar to my favorite banana bread recipe, but calling it a cake makes it even more fun to eat. 🙂 It’s great as a snack, as an easy breakfast, or as a dessert. (I can only imagine how delicious it would be warm from the oven, with a scoop of ice cream and some caramel sauce on top. Yum!) It’s also a great way to make your house smell absolutely heavenly.

The streusel topping isn’t strictly necessary, but I’m never going to say no to a streusel. I added chopped pecans to mine to give it even more crunchy texture, but feel free to leave them out if you’re nut free (or just don’t like them. This cake makes 16 pretty hearty servings (or 20 servings if you want them to be a more reasonable size) so it’s perfect for a crowd. It’s totally delicious!

Ingredients

for the cake:

  • 1 1/2 cups sugar
  • 3/4 cup butter softened
  • 3 eggs
  • 2 teaspoons vanilla
  • 1/3 cup buttermilk
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 4 overripe bananas mashed

for the streusel:

  • 1/2 cup sugar
  • 1/2 cup flour
  • 2 teaspoons cinnamon
  • 4 tablespoons butter cut into pieces
  • 1/4 cup finely chopped pecans

Instructions

  • Preheat the oven to 325. Prepare a 9 x 13 pan by spraying with cooking spray. In a large bowl or the bowl of a stand mixer, beat together the sugar and butter until light and fluffy. Mix in the eggs, vanilla, and buttermilk. Add the flour, salt, baking soda, and baking powder, and mix until just combined. Fold in the mashed bananas. Pour the batter into the prepared pan.
  • To make the streusel, whisk together the sugar, flour, and cinnamon. Smash in the butter using your fingers, until the mixture resembles damp sand. Stir in the pecans. Sprinkle the streusel mixture over the top of the batter. Bake 60-70 minutes, or until golden brown on top and a toothpick inserted into the center comes out clean. Let cool before slicing and serving.
