Who else totally loves chocolate and peanut butter together? It’s a classic combination for a reason! I love those flavors together in pretty much any form, but they’re especially delicious in cookies or cakes. A friend recently gave me a package of mini peanut butter cups from Trader Joe’s, and I couldn’t wait to use them in a baking recipe. They’re fantastic on their own, of course, but when you add them to a cookie and they get all melty and gooey, they are absolutely heavenly. These chocolate peanut butter oat bars turned out even better than I was hoping, and they were the perfect way to indulge my chocolate peanut butter craving!

These bars are a sweet variation on my favorite chocolate peanut butter oatmeal cookie recipe, and they are so good! As much as I love the individual cookies, the bars ended up being a little softer and gooier, and they stayed soft over several days. The combination of chocolate chips and mini peanut butter cups is totally delicious, and there is so much chocolatey goodness in each bite!

These bars are so rich and luscious that a small piece goes a long way. I cut my 9 x 13 pan into 24 bars, and they were the perfect size for me! With a glass of cold milk on the side, these chocolate peanut butter oat bars are the perfect way to satisfy your chocolate peanut butter cravings!

Chocolate Peanut Butter Oat Bars

Ingredients

  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup butter softened
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 cup peanut butter
  • 2 teaspoons vanilla
  • 2 cups old-fashioned oats
  • 1 cup semi-sweet chocolate chips plus more for sprinkling on top
  • 1 cup mini peanut butter cups plus more for sprinkling on top

Instructions

  • Preheat the oven to 350. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt, and set aside. In a large bowl or the bowl of a stand mixer, beat together the butter, sugar, and brown sugar until well blended. Add the eggs, peanut butter, and vanilla, and mix until combined. Add the dry ingredients to the wet ingredients and mix to form a soft dough. Mix in the oats, chocolate chips, and peanut butter cups.
  • Line a 9 x 13 pan with parchment paper. Spread the dough in an even layer in the prepared pan. Sprinkle additional chocolate chips and peanut butter cups on top if desired. Bake 30-35 minutes, or until the top is lightly browned and a toothpick inserted 2 inches from the edge comes out clean. Let cool in the pan for 10-15 minutes before moving to a cooling rack.
