Easy Soft Flatbread

This soft and fluffy flatbread tastes amazing, and is so easy to make. It’s perfect for making sandwiches, and totally delicious!

It feels like I have been struggling for YEARS to find the perfect flatbread recipe, and this one is definitely it! I’ve had lots of good flatbread from restaurants, but whenever I try to make it at home, it never turns out the way I like it. I want it to be soft and light, but still sturdy, and neither soggy or dry. Once I discovered this recipe a few weeks ago, I was totally hooked! I’ve made it at least once a week since then, and my whole family loves it. It’s super easy and quick to make, and comes out perfectly every time!

You can definitely cook this flatbread in a skillet if you prefer (or even on a grill if you’re feeling adventurous!). I love cooking it on my griddle so I can cook several pieces at once. The process of rolling them out and cooking them is pretty similar to the method for cooking tortillas.

You’ll wait until the pieces of dough start to have bubbles, then flip them and cook on the other side. Each piece of bread will cook for a few minutes on each side, for a total of 5-6 minutes. You’ll want them to be golden brown and cooked through.

The recipe below is enough for eight flatbreads, but I often double the recipe so we have plenty for leftovers. My 18 month old can eat a whole one by himself! :) Our favorite way to use them is to make chicken or pork gyros (recipe coming soon!) but they’re also perfect for sandwiches. They’re definitely best on the day they’re made, but the leftovers make amazing (and super easy) pizzas. We top them with this homemade pizza sauce, add cheese and toppings, and bake them in the toaster oven (or the regular oven) for about 10 minutes. So easy and so delicious!

Ingredients
- 1 1/2 tablespoons active dry yeast
- 2 tablespoons sugar
- 1 1/3 cups warm water
- 1 1/4 cups milk warmed
- 3 tablespoons olive oil
- 2 1/2 teaspoons salt
- 6 cups bread flour more or less as needed
Instructions
- In a large bowl or the bowl of a stand mixer, dissolve the yeast and sugar in the warm water. Let stand 5-10 minutes, until the yeast is bubbly. Add the warm milk, olive oil, salt, and 2 cups of flour. Mix, adding more flour 1/2 cup at a time, until the dough pulls away from the sides of the bowl. Knead 5-10 minutes, until smooth and elastic. Place in a greased bowl, cover, and let rise for one hour.
- After the dough has risen, gently punch it down and divide it into twelve equal pieces. Shape each piece into a ball and let rest for 15 minutes. While the dough is resting, preheat a large skillet or a griddle over medium heat. Roll out each piece of dough into a circle about 8 inches in diameter, and about 1/2 inch thick.
- Cook the flatbread for 3-4 minutes on each side, flipping when there are bubbles on the surface and the bottom is golden brown. Stack the cooked flatbread on a plate and wrap with a kitchen towel to keep them warm while the rest of the flatbread cooks. Serve warm with sandwich toppings of your choice. Store leftovers in an airtight container.







Hi, the ingredients says 6 cups flour and the method goes on to say 2 cups. How much should be used?
This recipe is far too vague. Move on to a different one that better explains the process. I just wasted 7 cups of flower and 2 hours trying to form a dough and all I ended up with was a sloppy mess. Don’t waste your time.
My flatbread came out so soft and fluffy! You do have to be patient because it does take at least 10minutes of kneading. It was so easy to roll out and quick to cook on the stovetop. It was the perfect compliment to my falafel.
