Easy Pico de Gallo

This delicious and easy pico de gallo is the perfect way to enjoy those luscious garden tomatoes. It’s so flavorful and fresh!

It’s finally tomato season! My garden this year is not quite as lush as it was last year, and I’m still troubleshooting a few things. Last year my tomato plants were absolutely giant (taller than me!) and producing a huge amount of fruit. This year my plants are a little smaller and slower to mature, but the tomatoes are finally starting to ripen! So far I have mostly cherry tomatoes (we LOVE the sungold variety), but I’m starting to get a few larger tomatoes too. I have a collection of delicious tomato recipes that I’m excited make again this year, but why not add another? This delicious and easy pico de gallo recipe is the perfect way to enjoy those juicy summer tomatoes. It’s so fresh and tasty, and totally addicting!
Part of the beauty of pico de gallo is its simplicity, so it’s important to use good quality ingredients. If you don’t have access to fresh garden tomatoes, I would recommend using tomatoes on the vine instead of Roma tomatoes. The Roma tomatoes (at my grocery store at least) tend to not be very flavorful and sometimes have a mushy texture. I used red onion in the recipe below, but yellow onion or even sweet onion will work too. With a little cilantro (again, from my garden!) and some salt, garlic, and lime juice, it’s a delicious topping for grilled chicken or fish. It’s also pretty fabulous when eaten with tortilla chips. I think I’m going to need to keep a fresh batch of pico de gallo in the fridge all summer long!

Ingredients
- 3-4 medium ripe tomatoes chopped
- 1 teaspoon minced garlic
- 1/4 medium red onion chopped finely
- juice of one lime
- 1/2 teaspoon salt
- 1/4 cup chopped cilantro
Instructions
- Add all ingredients to a medium bowl and mix until combined. Refrigerate for at least two hours to let the flavors blend.
