Peach Crumb Bars
These delicious peach crumb bars have a sweet and buttery crumb mixture, surrounding juicy and tender peaches. They’re perfect for summer!

I mentioned yesterday that it’s finally peach season in Oregon, and it’s the absolute best! I am completely in love with fresh peaches, and all of the delicious things I can make with them. Yesterday I shared a post with a list of some of my favorite peach recipes, and these peach crumb bars are another perennial favorite at my house. They’re easy to make (the hardest part is peeling the peaches) and they taste absolutely amazing!

These peach crumb bars have two layers of buttery sweet crumb, with juicy fresh peaches in between. The recipe makes a big batch, so they’re perfect for bringing to a potluck (or enjoying all by yourself after the kids are finally in bed for the night and you actually get to sit down for the first time that day, not that I can relate or anything…). I think they’re best made with fresh peaches, but if you’re in a pinch you could definitely substitute drained canned peaches. During the winter I often make these peach crumb bars with home-canned peaches, and the taste brings back all of the warm memories of summer!

I would recommend refrigerating the leftovers, if there are any, and I actually think they’re really tasty when they’re cold. My husband likes to warm them up and eat them with a scoop of ice cream on top. I mean, they are so delicious you really can’t go wrong either way!

Ingredients
for the bars:
- 3 cups flour
- 1 cup sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup cold butter
- 1 egg lightly beaten
for the filling:
- 5 cups peaches peeled and diced (about 7 peaches)
- 2 tablespoons lemon juice
- 1/2 cup flour
- 1 cup sugar
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
Instructions
- Preheat the oven to 375. Line a 9 x 13 pan with parchment or spray with cooking spray. In a medium bowl, whisk together the flour, sugar, baking powder, and salt. Cut in the butter using a pastry blender or two forks, then mix in the egg to form a crumbly dough. Press half of the dough into the prepared pan.
- To make the filling, toss the peaches with the lemon juice. Whisk together the flour, sugar, salt, cinnamon, and nutmeg, then toss with the peach mixture. Spread the peaches over the dough in the pan, the crumble the remaining dough over the top, covering the peaches evenly. Bake 45 minutes, or until light golden brown. Let cool before cutting into squares.
