I’ve mentioned lots of times how selective my three year old is about her food, but one food she absolutely loves is pancakes. She will eat them just about any way that I make them! Since her diet is so limited in a lot of ways, I try to add a little extra nutrition wherever I can. She doesn’t typically each much in the way of whole grains, so these whole wheat pancakes feel like a win! They’re so light and fluffy, and just as delicious as our favorite pancakes. They’re easy and quick to make, too!

Sure, adding a bunch of butter and syrup to the top of the pancakes probably negates the health benefits of the whole wheat flour, but yolo! Or something. My daughter eats them plain (because she won’t eat anything that is sticky or saucy) so feel free to go her route if you prefer. 🙂 These pancakes are also super delicious with a fresh fruit sauce on top. Some of my favorites are this strawberry sauce, cinnamon peach syrup, and blackberry sauce.

Fluffy Whole Wheat Pancakes

Ingredients

  • 2 cups whole wheat flour
  • 1/4 cup sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 2 cups milk
  • 1/4 cup canola oil
  • 1 teaspoon vanilla

Instructions

  • Heat a griddle or large skillet over medium heat. In a medium bowl, whisk together the flour, sugar, baking powder, and salt. In a measuring cup, whisk together the egg, milk, oil, and vanilla. Add the wet ingredients to the dry ingredients and mix until just combined.
  • Pour 1/4 cup scoops of batter onto the prepared skillet and cook until bubbles form on the surface, then flip. Cook an additional minute or so and then remove to the serving plate.
