In general, I don’t devote a lot of time to cooking side dishes, so when I share a recipe for one with you, you know it’s a good one! It feels difficult enough to scrape together a main dish for dinner every night, so we usually just have fresh fruit and/or lightly sautéed vegetables as sides with dinner. They’re simple and delicious, and a good way to make sure my kids are getting some fruits and vegetables each day. These Instant Pot loaded mashed potatoes, though, are so delicious that they are worth a little extra effort, even on a busy night. They’re actually pretty quick and easy to make, and the Instant Pot does most of the work. The bacon, cheese, sour cream, and green onions add so much flavor, and make these potatoes extra tempting!

If you don’t have an Instant Pot, you can definitely cook the potatoes on the stove instead. I love using the Instant Pot, though, because I don’t have to deal with a hot and steamy kitchen while the potatoes boil. And if I forget about them and let them sit in the Instant Pot for a while (which happens all too often!), they won’t get overcooked. Once the potatoes are cooked, you’ll stir in all of the delicious flavorings, then pop them in the oven for a little while to melt the cheese. These potatoes are so decadent and delicious, and make such a tasty side dish!

Ingredients

  • 2 pounds Russet potatoes peeled and cut into one inch pieces
  • 1 cup chicken broth
  • 4 tablespoons butter
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 1/4 cups shredded cheddar cheese
  • 2 green onions diced
  • 1/3 cup crumbled bacon pieces

Instructions

  • Add the potatoes to the Instant Pot insert and pour the chicken broth over the top. Place the lid on the Instant Pot and turn the knob to seal. Cook on manual at high pressure for 6 minutes, then let the pressure naturally release for 5 minutes. Quick release the remaining pressure.
  • Preheat the oven to 350 and grease a 9 x 9 baking dish (or a dish with a similar volume). Add the butter, sour cream, and milk to the Instant Pot and mash the potatoes. Add the salt, pepper, and garlic powder, then taste and adjust seasonings as needed. Stir in 1 cup of the cheese, most of the green onions, and most of the bacon pieces.
  • Spread the potatoes in an even layer in the prepared baking dish, and sprinkle the remaining cheese, green onions, and bacon on top. Bake 15 minutes, then remove from the oven and serve hot.
