I’ve been looking through some of the oldest recipes on the blog, and remembering how many of them are actually really great recipes! I originally posted these apple cinnamon snickerdoodles way back in 2012, when I had a five year old and a one year old and we still lived in a tiny rental in Utah. Life is so different now! We own our own home here in Oregon, I have twice as many kids, my husband has a completely different career, and this blog has gone from being a fun way to post what we ate for dinner last night (for maybe five friends to see) to a full time career for me. (I know, I can’t believe it either!) Don’t worry, though, these apple cinnamon snickerdoodles are still just as delicious, twelve years later!

Snickerdoodles have always been one of my favorite cookies, and the grated fresh apple makes them extra delicious. The flavor combination of apple, cinnamon, and sweet buttery cookie is to die for! The apples make these cookies so moist and tender, while still crisp and chewy around the edges. They’re a delightful way to celebrate the flavors of fall!

Apple Cinnamon Snickerdoodles

Ingredients

  • 1 cup butter at room temperature
  • 3/4 cup granulated sugar plus 2 Tablespoons for rolling
  • 3/4 cup brown sugar
  • 2 eggs
  • 3 cups flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup grated apple
  • 2 teaspoons cinnamon for rolling

Instructions

  • Combine butter, 3/4 cup granulated sugar, and brown sugar in a large bowl and beat until fluffy. Add eggs and beat to combine. In a medium bowl, combine flour, cream of tartar, baking soda, and salt. Add dry ingredients to butter and sugar and stir until just combined. Stir in apples. Chill dough for 1 hour until firm.
  • Preheat oven to 400°F. Line cookie sheets with parchment paper or silpats. Combine remaining 2 Tablespoons sugar and cinnamon in a small bowl. Scoop chilled dough, roll into 1" balls, roll in cinnamon sugar, and place on prepared cookie sheets. Bake for 10-12 minutes.
