It’s officially fall! Fall is definitely my favorite season, and I am so excited to indulge in all of my favorite fall traditions (and fall treats!). No fall season is complete without a trip (or several) to my favorite apple farm for some apple cider slushies and doughnuts, and bags of fresh apples to take home. These apple streusel bars are an easy and delicious bake that perfectly showcases all of the crisp juicy apples that are available this time of year!

I used cosmic crisp apples to make the bars this time, but I’ve used other varieties in the past (Granny Smith, gala, and honey crisp) and they’ve all worked great! These streusel bars are pretty foolproof, so use what you have. The streusel itself is buttery and crisp, and takes only a few minutes to mix together. It’s one of those unfussy recipes that doesn’t need to be perfect or precise, and still turns out great. The simple almond glaze on top adds just a little extra sweetness, and makes them deliciously indulgent. These bars will last several days if stored in an airtight container, and are sturdy enough to bring along on adventures or pack in lunchboxes. They are so good!

Apple Streusel Bars

Ingredients

for the streusel:

  • 2 cups flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup butter softened
  • 1 egg beaten

for the apple filling:

  • 1/2 cup white sugar
  • 1/4 cup flour
  • 1 teaspoon cinnamon
  • 3 medium apples peeled and sliced

for the glaze:

  • 2 cups powdered sugar
  • 2-3 tablespoons milk
  • 1 teaspoon almond extract

Instructions

  • To prepare the streusel crust, mix the flour, sugar, salt, and baking powder in a medium bowl. Cut in the butter with a pastry blender or two knives until you have pea-sized crumbles. Gently mix in beaten egg. Spray a 9×13 baking dish with non-stick cooking spray. Gently pat about 2/3 of the crumb mixture onto the bottom of the dish. Preheat oven to 350 and set aside.
  • To prepare the apple filling, combine the flour, sugar, and cinnamon and toss with apples. Spread the apples out on prepared crust. Sprinkle reserved crust mixture over apples evenly and bake in preheated oven for 40 minutes. When finished, allow to cool completely.
  • To prepare the glaze, whisk together the powdered sugar, almond extract, and enough milk to achieve desired consistency. Drizzle glaze over cooled pastry and allow to harden. Cut into bars and serve.
