Sheet Pan Chicken Gyros

These delicious and flavorful sheet pan chicken gyros are so simple to make. They’re an easy weeknight meal that everyone will love!

I posted about my new favorite flatbread on Tuesday, and now I’m sharing the recipe for my favorite (super easy) sheet pan chicken gyros! I make no claims that these are authentic, but I can promise that they are totally delicious. Since we discovered the flatbread recipe, we’ve had these gyros for dinner at least once a week, and they are a new family favorite. We all love them, except for my super picky four year old who basically just eats air and goldfish crackers. You can’t win them all, though! :)

The chicken is marinated in a vinaigrette, then tossed with onions and baked in the oven for 25-30 minutes. It comes out so tender and juicy and delicious! I love to use Brianna’s French vinaigrette dressing, but feel free to use what you love (or make your own). With some fresh warm flatbread, a scoop of tzatziki, and some chopped fresh cucumbers and red onions on top, these gyros are absolutely amazing! I like to serve this lemon rice on the side (just like my favorite greek restaurant does!) and together it’s a fantastically delicious meal.

Ingredients
for the chicken:
- 1 cup vinaigrette dressing
- 1 teaspoon oregano
- 1 teaspoon garlic powder
- 1/2 teaspoon pepper
- 1 1/2 pounds boneless skinless chicken breast cut into chunks
- 1 large onion peeled and sliced
for serving:
- flatbread warmed
- tzatziki
- red onion
- cucumber
Instructions
- In a medium bowl or food storage container, whisk together the vinaigrette, oregano, garlic powder, and pepper. Toss the chicken in the mixture and refrigerate for at least 30 minutes.
- When you are ready to cook the chicken, preheat the oven to 425. Toss the onions with the chicken and spread on a large rimmed baking sheet. Bake 25-30 minutes, turning halfway through, until the chicken is lightly browned.
- To serve, add a scoop of chicken to the center of a piece of flatbread. Top with tzatziki, red onion, and cucumber.
