I can’t believe it’s a new year already! I don’t even want to think about making plans or having hopes and dreams for 2022, after the way 2020 and 2021 have gone for me. I will be really pleased if we all make it through the year mostly intact (hopefully with no surgeries, casts, or new diagnoses), and anything positive on top of that will feel like an extra blessing.

I always have a little post-Christmas letdown, because it feels like the whole bleak winter is stretching out in front of me without much to look forward to. I really struggle with seasonal affective disorder, and the winter just feels never-ending and dreary at times. The best way that I’ve found to get through it is to set my expectations low, treat myself kindly, and take breaks when I need them. As simple as it sounds, one of my favorite ways to turn around a bad day is with a warm cup of cocoa next to the fireplace. I have a great stovetop hot cocoa recipe here that I make often, but sometimes when the kids are at school I just need a single serving of hot chocolate, and that’s where this homemade hot chocolate mix comes in!

This homemade hot chocolate mix is so simple to make, with ingredients I always have on hand, and it makes the creamiest, smoothest, most delicious hot chocolate. You’ll blend all of the ingredients together in the food processor or blender until it’s smooth, and then store it in an airtight container until you’re ready to use it. The recipe makes about 4 cups of mix (around 10-12 servings of hot chocolate), but you can easily double or triple the recipe if you want to stock up.

To make a cup of hot chocolate, just mix 1/3 cup of hot chocolate mix into one cup of warm milk. You could use water in a pinch, but I think it tastes much creamier and more delicious when made with milk. I like to store my hot chocolate in these reusable plastic deli containers (which are also perfect for gifting!), but any airtight container will do, even a zipper bag.

You can drink the hot chocolate plain, or dress it up with some mini marshmallows, whipped cream, and sprinkles like I did. It’s the perfect sweet treat to brighten up a cold day!

Homemade Hot Chocolate Mix

Ingredients

  • 1 1/2 cups dry nonfat milk powder
  • 1 cup powdered sugar
  • 3/4 cup unsweetened cocoa powder
  • 3/4 cup white chocolate chips
  • pinch of salt

Instructions

  • In a medium bowl, whisk together the milk powder, powdered sugar, cocoa powder, chocolate chips, and salt. Add all of the ingredients to a blender or food processor (you may need to do it in batches) and pulse until the white chocolate chips are finely ground. Store in an airtight container until ready to use. To make a cup of hot chocolate, whisk 1/3 cup of hot chocolate mix into one cup of warm milk until completely dissolved.
