It has been a while since I shared an instant pot recipe, but that’s not because I haven’t been using my instant pot! It really is one of my favorite kitchen appliances, and I use it multiple times every week, sometimes more than once a day. Everything is just easier to cook in the instant pot! I make a ridiculous amount of soups and stews, and it’s my go-to whenever I need to batch cook meat. This instant pot taco chicken is a recipe I make really frequently, and it’s a lifesaver for busy nights. I stock the freezer with meal-sized portions of this chicken, and can pull them out as needed for tacos, enchiladas, tostadas, or burritos. My whole family loves this chicken, and I love that it’s so easy to make!

The chicken comes out of the instant pot so tender and juicy, and loaded with flavor. I like to add the onion and salsa to give it even more flavor, but it’s also delicious with just the combination of spices. Once the chicken is cooked, I shred it with two forks, and then toss it in the juices in the pot to add even more flavor. When I package it for the freezer, I always make sure to add a little extra juice into the package to keep it moist and flavorful. This chicken is so versatile and delicious!

Ingredients

  • 4 large chicken breasts about 2 pounds
  • 2 teaspoons olive oil
  • 1 medium onion diced
  • 1 cup medium salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth

Instructions

  • Heat the olive oil in the instant pot on the saute function. Add the onion and cook until softened, stirring frequently. Add the salsa, cumin, chili powder, garlic powder, salt, pepper, and chicken broth to the pot, and stir to combine. Add the chicken to the pot. Cover and turn the knob to seal. Cook the chicken on high pressure for 10 minutes, then let the pressure naturally release for 5 minutes. Quick release the remaining pressure. Shred the chicken using two forks, then toss the chicken in the juices before serving.
