Who’s excited for another delicious pumpkin recipe? I was in the mood for some pumpkin muffins this week, and realized that I don’t actually have a basic pumpkin muffin recipe on this blog. It was obviously high time to rectify that! I do have this pumpkin cream cheese muffin recipe already on the blog that is totally delicious, but sometimes I don’t have cream cheese on hand, or I just want a more basic muffin. That’s where these beauties come in! These pumpkin streusel muffins are perfectly moist and tender, with the most delicious lightly spiced pumpkin flavor. They’re topped with a crisp and sweet buttery streusel, making them even more irresistible!

The streusel on these muffins is technically optional, and they’re still totally delicious without it, but I can never resist a good streusel! I threw in some pumpkin seeds for a fun little twist (and because they’re my favorite snack these days) but you can definitely leave them out if you don’t like them, or don’t have them on hand. The muffins themselves are made with pantry staples, and are so easy to whisk together. We are definitely going to be enjoying these muffins all through the cozy months!

Ingredients

for the muffins:

  • 1 3/4 cups flour
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/4 teaspoon cloves
  • 1/4 teaspoon nutmeg
  • 2 eggs
  • 15 ounces pumpkin puree
  • 1/2 cup canola oil
  • 1 teaspoon vanilla

for the streusel:

  • 1/2 cup flour
  • 3 tablespoons sugar
  • 3 tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • 4 tablespoons melted butter
  • 2 tablespoons pumpkin seeds

Instructions

  • Preheat the oven to 375. Line 20 muffin cups with paper liners.
  • In a large bowl, mix together the flour, sugar, brown sugar, baking soda, salt, cinnamon, cloves, and nutmeg. In a medium bowl or large measuring cup, whisk together the eggs, pumpkin, oil, and vanilla. Pour the wet ingredients into the dry ingredients, and mix until just combined. Scoop the batter into the prepared muffin tins, filling the cups 2/3 full.
  • To make the streusel, whisk the flour, sugar, brown sugar, and cinnamon together with a fork in a small bowl. Drizzle in the melted butter and whisk until the butter is blended in and the mixture is crumbly. Mix in the pumpkin seeds. Sprinkle the streusel over the tops of the muffins.
  • Bake 20-22 minutes, or until the muffins are lightly browned on top and spring back when touched gently on top.
