When I’m pondering which kind of cookies to bake (which I end up doing 2-3 times per week at this point) my answer is nearly always these chocolate chip cookies. They are pretty much perfect in any way, and why mess with perfection? I also must confess that I’ve never been a huge fan of white chocolate macadamia nut cookies. Somehow it seems like they are always too dry, too salty, too sweet… and just overall not satisfying!

A few weeks ago I was standing in the nut aisle at Trader Joe’s, pondering all of my options, and it occurred to me that I could take my fabulous cookie dough base, and add in my favorite white chocolate chips and lightly salted macadamia nuts, and make a cookie that was actually delicious. I picked up supplies, got to work, and in less than an hour had these beauties out of the oven. They’re luscious, rich, perfectly sweetened, and totally delicious. A total cookie win!

The dough for these cookies freezes really well (you can see my tips for freezing cookie dough here), and they’re just as delicious baked from the freezer as they are fresh. It’s definitely worth it to use higher quality white chocolate chips (I always use Guittard brand) because the cheaper ones don’t melt very well and can make the cookies really greasy. I prefer to use lightly salted macadamia nuts, but if you only have salted nuts you could omit the salt in the recipe and/or use unsalted butter. These cookies are fantastic!

White Chocolate Macadamia Nut Cookies

Ingredients

  • 12 tablespoons butter melted
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 1 egg + 1 egg yolk
  • 2 teaspoons vanilla extract
  • 2 1/4 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups good quality white chocolate chips
  • 1 cup macadamia nuts chopped

Instructions

  • Preheat the oven to 350. Line two baking sheets with parchment or silicone.
  • In a large bowl or the bowl of a stand mixer, mix together the butter, brown sugar, and sugar. Add the egg, egg yolk, and vanilla extract, and mix until combined. Add the flour, baking soda, and salt, and mix to form a soft dough. Gently fold in the white chocolate chips and macadamia nuts.
  • Scoop the dough onto the prepared baking sheet using a large cookie scoop (I like to use a 3 tablespoon scoop). Bake 12-13 minutes, or until the cookies are lightly browned around the edges but still just slightly underbaked. Let cool on the pan for 5 minutes before moving to a cooling rack.
