Now that we’re heading into summer, it’s time to bring on all the refreshing drinks! Portland keeps going back and forth between cold and rainy weather and hot and sunny weather, and my body doesn’t know how to keep up. I can’t seem to adjust to the temperature, no matter what it is. On those hot days, there is nothing more refreshing than this strawberry limeade! It’s made with fresh limes, and has the most delicious combination of flavors. It’s super easy to make, with only a handful of ingredients, and tastes fantastic!

Using frozen strawberries in this recipe is a quick and easy shortcut to a frosty cold drink. You don’t even have to wait for it to chill in the fridge! If you’d prefer to use fresh strawberries, they will also work, but you will need to chill the drink for a few hours before it’s ready to serve. It’s important to just gently pulse the limes a few times. If you blend them too much, the limeade will be bitter. I know it sounds unusual, but this really is my favorite method for making lemonade and limeade. It’s so easy and quick and I don’t even have to dig my citrus juicer out of the back of the cupboard.

Easy Strawberry Limeade

Ingredients

  • 2/3 cup sugar
  • 6 cups cold water divided
  • 3 medium limes cut into quarters
  • 2 cups frozen strawberries

Instructions

  • In a pitcher, stir together the sugar and 3 cups of water until the sugar is dissolved. Pour the sugar water into a blender and add the limes. Pulse 6-8 times, until the limes are broken up slightly but not blended. (Don’t blend the limes too much or the limeade will be bitter.) Pour the lime mixture through a strainer back into the pitcher.
  • Add the strawberries and the remaining 3 cups of water to the blender, and blend until smooth. Pour the strawberry mixture into the lime mixture, and stir to combine.
  • Serve cold with ice and refrigerate any leftovers.
